Brillat Savarin
We need to prepare it in advance to incorporate the truffles inside the cream cheese. The best way is to cut the Brillat horizontally in half, remove a little bit of cream, chop some Black Truffle and fill the hollow area. Cover the truffle-filled hole with cheese and stack the other half of the cheese on top. Black Truffle enhances the taste of the triple cream and give it a unique taste.
Coulommiers Brie
We prepare the cheese as we would with the Brillat. The truffle shavings will give you some crunchy texture. I love the strong flavour of the cheese paired with the unusual crispy texture and long flavourful finish of the black truffle.
Mont D’Or
Just cut off the top of the cheese and sprinkle a lot of chopped black truffle over it. Choose a cheese that is from the beginning to middle of the season, when it’s creamy, fruity and not too powerful. If the cheese becomes very mature it will result in a smoky flavour due to the Epicea Wood surrounding the cheese and I consider it too strong to complement with the truffle.
